What to eat
Moroccan dishes are influenced by Berber, Jewish, Arab, and French cultures. See below my top recommendation on must-haves when there.
- Lamb Tajine – clay cooking pot of slow cooked inside (beef, lamb, chicken, veggies, etc) . My favourite one being the Lam Tajine.
- Couscous – served with meat or vegetable stew
- Fish Chermoula – mix of herbs and spices used when grilling or baking fish and seafood
- Harira – Moroccan lentil soup
- Pastilla – flaky pie is traditionally made with pigeon
- Khobz – crusty bread
- Brochettes – tasty kebabs are rubbed in salt and spices
- Tanjia – clay pot filled with chunks of beef or lamb and a bunch of spices, then slow cooked in the embers of a furnace.

Where to stay in each place and what to see
Fes: Riad Dar Fez

Be careful not to get lost as there are more than 9k little alleys in the Medina. Be sure to visit the world largest tannery (number 10) . Eat at: Berrada Family Restaurant

Tangier: Dar Tanger Medina
Have a mint tea at Hafa Cafe at sunset and make sure to visit the Phoenician tombs, merging with locals. Best panoramic view of the coast and city too. From here get an internal flight to Marrakech for around 25 USD.
Marrakech: Riad Dar Alsaad
To best enjoy this city make sure to stay in the Medina (old town) to explore all the souks, terrace bars and mosques. Eat at @lesalamamarrakech (go there at sunset to get the most of the city views); great atmosphere, generous portions and authentic ambience. Here you can also enjoy belly dancers entertaining diners throughout the evening. Visit Jardin Majorelle, Marrakech most famous and picturesque botanic garden. Have a mint tea at Grand Balcon du Cafe Glacier to appreciate the vibrant square of El-Fna from above.
